
1 1/2 oz Rhum Agricole @rhumclement
1 oz Lime Juice
1/2 oz Simple Syrup
1/4 oz. Hibiscus Syrup
2 Dashes Cardamom Bitters @scrappysbitters
Egg White

Shake together all ingredients except egg white for a few seconds. Strain and discard ice, add egg white and dry shake for ~30 seconds. Pour into cocktail glass. Garnish with lime peel and flowers

I was stoked when Marc reached out to me for a little Tipple Trade. It’s become somewhat of an iconic #drinkstagram event started by @scottishmixology And @wisecraft_mixology, so I’m excited to finally join in. It’s a fantastic idea and a great way for mixologists and bartenders to connect and talk about and look over each other’s recipes.
There were so many great ones to choose from on his page, but his daiquiri riff using rhum agricole and hibiscus with egg white sounded amazing and I’ve been wanted to use my bottle of agricole more so this was the perfect thing to break more into it. His recipe was just fantastic, but I had to make a slight alteration since I was missing one ingredient. He used mint Bitters and the closest thing I had was cardamom. It was still fantastic but I probably would have preferred the slightly minty bitterness his recipe calls for.
But it was so smooth and just the right amount of sweetness in a daiquiri for me with the agricole and blend of hibiscus and simple syrup. The egg white did wonders here (as it usually does) by giving such a silky texture to drink. It’s probably my favorite use of egg white yet. Cheers!
