
1 1/4 oz. Coconut Rum
3/4 oz. White Rum
1/2 oz. Simple Syrup
3/4 oz. Lime Juice
Muddled Watermelon

Place 5-6 watermelon chunks in shaker and muddle well. Add in other ingredients except egg white and shake with ice briefly. Add egg white and shake a lot more. Double strain into glass and garnish with watermelon slice.

A perfect summery variation on a Daiquiri to enjoy on these still warm days. It’s a little heavier and creamier with the egg white in there, but still refreshing nonetheless. This was also going to be strictly a watermelon Daiquiri with egg white but then I saw my coconut rum and thought….eh why not? It might seem like a slightly odd and out of the box combo, which it kinda is, but it still works and this one was delicious. I think the egg white honestly makes the coconut really belong here, giving an almost cream of coconut taste behind the watermelon.
Oh and also I picked up my first plant baby for the new apartment over the weekend, so of course I had to use it as a backdrop for a photo. His name is Gerald the Spider Plant, and he is beautiful. Hopefully I don’t kill him. Cheers!
